Coconut & Green Lentil Masala



Mix together
1 tsp cumin
1/2 tsp ground ginger
1 tsp red pepper flakes
1 Tb smoked paprika
2 tsp Garam Masala
1 tsp salt
2 Tb grape seed oil
1 Tb tomato paste concentrate

1 onion
1 clove garlic, minced
1 Tb coconut oil

Add paste you made above and sauté a couple more minutes

Add 1 box Pom tomatoes (26 oz)
1 can coconut milk
1 cup green lentils
1 to 1 1/2 cups water… Add as you go.

Cook for 35-45 min stirring frequently till lentils are tender. Add a couple handfuls of greens and stir in… Like collards or kale. Serve over rice and garnish with cilantro.
