Blueberry Kale Smoothie


My Tower Garden has totally taken off in the Texas heat. I’ve never been able to grow a thing and I can hardly keep a house plant alive… but here I am, 4 weeks after my Tower Garden purchase and I have a garden!! No weeds, no dirt… just loads of green growth. And it’s the most fantastic aeroponic garden because I only have to check the water level once a week. Which is good because I’m very forgetful… very. Bring on the cucumbers, peppers, and kale. Yum.


Here is my baby kale…. I picked a full handful of leaves off for my morning smoothie. It’s so pretty…and it’s very sweet… not bitter like the kale I pick up at the store. And I’m told that the more I pick the more it will grow so there will definitely be more kale recipes to come.


I chose to pair my kale, a crazy nutrient dense green, with blueberries which are a crazy nutrient dense berry. It’s the perfect marriage for a healthy smoothie. It’s a great smoothie after a killer workout because it helps with circulation which speeds muscle recovery.


Blueberry Kale Smoothie

  • 3/4 C Unsweetened Rice Milk (or almond milk)
  • 3/4 C Water
  • 1 Handful Chopped Kale (or Spinach)
  • 1 Cup Frozen Wild Blueberries
  • 1 Scoop French Vanilla Juice Plus Complete
  • 1/2  Frozen Banana
  • 2 Juice Plus Vineyard Capsules (optional, but highly recommended for muscle recovery)

Put everything in a high powered blender such as a Vitamix or Blendtec. If you are adding the Vineyard Capsules, open them up and dump the powder into the blender and discard the capsules. Blend on high till the kale and blueberries are completely blended.
