Vegan Spelt Pancakes

Happy Easter!!!! The baskets have been found and now it’s time for breakfast before we head off to chapel.

These pancakes are super light and fluffy and no one would ever know they didn’t contain dairy milk or eggs.

And check out the cute baby pineapple I found to put in my oldest son’s Easter Basket. When children turn 15 you have to get creative.

Vegan Spelt Pancakes

1 C spelt flour
1 C all purpose flour
3 Tb aluminum free baking powder
Pinch salt
2 C unsweetened vanilla almond milk
2 tsp agave nectar
3 Tb grape seed oil plus extra for oiling pan

Mix all dry ingredients then add in the wet and whisk. Let sit for a couple minutes so the baking powder can activate. Grease a large skillet with the extra gape seed oil. I like to drizzle in just a bit then use a pastry brush to evenly coat the pan. Ladle in 1/4 C pancake mix into pan which is over med-high heat. Flip once. Enjoy with real maple syrup and blueberries.
